Salicornia, also known as sea asparagus, is called "Savzodd" in the local dialect, and the recipe we use for preservation in oil is ancient. Flavored with spices and wrapped in olive oil, it is an excellent accompaniment for mixed salads, omelets, soups, and sauces, for seasoning first and second courses. A characteristic plant of the northern Gargano coast, it has a tufted habit, forming a densely and irregularly branched bush from the base. Rich in iron, magnesium, potassium, and calcium, it is known for its purifying, refreshing, and antiscorbutic properties. Available in a 212g format.
