Sun-Dried Tomatoes from Puglia

Gargano Salicornia

Salicornia, or sea asparagus, is known locally as “Savzodd,” and the recipe we use for preserving it in oil is ancient.

Seasoned with spices and enveloped in olive oil, it is an excellent accompaniment for mixed salads, omelets, soups, and sauces, as well as for seasoning first and second courses.

A characteristic plant of the northern Gargano coastline, it grows as a dense, irregularly branched bush.

Rich in iron, magnesium, potassium, and calcium, it is known for its purifying, refreshing, and antiscorbutic properties.
