Spring in Gargano does not announce itself with fanfare, but it slowly makes its way.
The light changes, the earth warms up, the first shoots appear.
And we start working again among the olive trees.

In this period we are all busy with pruning , one of the most important – and least visible – tasks of our profession.

Why pruning is essential for extra virgin olive oil

In our work, each season has its own rhythm. Spring is the time for caring for trees.
Pruning the olive tree serves to give balance to the plant, promote the circulation of air and light, and strengthen it in view of flowering and the future harvest.

Pruning means preparing the plant to produce a quality extra virgin olive oil, rich in aromas, intense, harmonious.
It is an ancient gesture, handed down, that combines technique and experience. We do it by hand, plant by plant, respecting the shape and history of each tree.

The flowering of the olive tree: the promise of the future oil

In a few weeks our olive trees will be filled with small white flowers.
It is the flowering, a delicate and silent phase on which everything depends: the formation of the olives, the quality of the fruit, the aromatic profile of the oil.

Spring is the time to sow trust.
Every branch pruned today will be a branch that, tomorrow, can give its best.
